Blue Cheese Dip

Well, it's 8:02, the kids are in bed, and my husband is out of town. For those of you that know me know what that means.  I get to go to bed now too!!! So no stories tonight just what I ate and a YUMMY recipe for you. I hope you enjoy it.

Counting every bite today:

Breakfast -
- Egg sandwich on a sandwich flat with a fat free slice of cheese (5 points)

Lunch -
- Mega Sandwich.  3 slices of turkey on a sandwich flat with a ton of spinach and orange peppers. (3 points)

Snack -
- Sliced Peppers and Blue Cheese Dip (1 point)
My mom gave me this recipe.  Since I don't know were she got it from I will give her credit for it.  Thanks Mom.

Blue Cheese Dip
(3tbls per point)

Ingredients:
6oz fat free Greek Yogurt (Plain)
 1 Tbls Light Mayo (or Miracle Whip)
1 Tbls Lemon Juice
1 Tbls Vinegar (white wine or rice vinegar)
6 Tbls Lite Sour Cream
1/2 Cup Reduced Fat Crumbly Blue Cheese
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Parsley (dried)
1/2 tsp dill (dried)
salt and pepper to taste

Directions:
Mash blue cheese with yogurt using a fork.
Stir in the rest.
**Best if made a day ahead.


Dinner -
- Leftover rice, chicken and veggie stir fry.  Bob made it so I don't know the recipe to share it.  Sorry maybe one day I will have him write it down for us because it is super good. He makes this teriyaki sauce from a recipe we got in Hawaii and puts it on the stir fry. Yum! (8 points)
- Glass of milk (2 points)

Dessert -
- 3 cookies (6 points)

Not bad! Ending the day with a total of 25 points!  Good night all.  Sweet dreams!

  1. Can't wait to try Mom's dip...don't you love the availability of all the greek yogurts?!?
    Hardly thought about eating/binging yesterday while preparing for yardsale. Today's off on the wrong foot. Already broke Rule #1(eating at computer) & #2(noshing at counter). Still time to get on track...

    1. Greek yogurt is still kind of new to me. I have only tried the plain so far but am loving all the different things I can do with it. I no longer use sour cream, greek yogurt is used instead.
      It is early...lots of time to get back on track. I now always have veggies cut up and this dip in my fridge. That way when I want something I grab that. I brought the dip to my work yesterday and everyone was loving it. They were putting it on their salads and dipping bread into it.
      Sorry the site is hard to navigate. For what I do with it, it has been very friendly to me. I wonder why you can add a photo?
